Chicken Tortilla Soup
- 2 tablespoons vegetable oil
- 1 small onion, diced
- 2 tablespoons minced garlic
- 1 Green Pepper Chopped.
- 6 cups low-sodium chicken broth
- 1 (14.5-ounce) can diced tomatoes
- 1 (14.5-ounce) can black beans
- 3 chicken breast, boneless and skinless
- 2 limes, juiced, plus wedges for garnish
- Salt and freshly ground black pepper
- 1 tbsp of red pepper flakes
- 1 cup roughly chopped fresh cilantro leaves
- 1 (8-inch) flour tortillas, grilled, cut into thin strips
- 1 avocado, pitted, sliced
- 1 cup shredded Monterrey cheese
It’s really easy and so good.
